Roast Pork with Vegetables Recipe

Roasted Pork with vegetables is an easy-to-prepare recipe that your guests and loved ones will love. Juicy oven-baked meat, potatoes, carrots, bright spices, and a subtle hint of barbeque sauce are the perfect combination for a festive evening.

This dish is completely independent and does not require additional preparation of a side dish - baked vegetables are actually enough!

Ingredients

  • 1 kg. Pork           
  • 5 tbsp. Olive oil
  • 2 tbsp. Soy sauce             
  • 5 tbsp. Barbecue sauce 
  • 1 tsp. Onion Powder      
  • 1 tsp. Mustard  
  • 1 tbsp. Cane sugar          
  • 4 clove Garlic     
  • Salt (to taste)
  • Ground black pepper (taste)
  • 3 Potatoes         
  • ½ cup Carrot      
  • 100 g Asparagus              
  • 1 Bell pepper
  • Parsley (to taste)

Instructions

Step 1
Preheat oven to 360 °F. Prepare a baking sheet lined with parchment paper or foil. Set aside for a while. Prepare a marinade for Pork: Pour olive oil, soy, barbecue into a large bowl.
Step 2
Next, pour onion powder, brown sugar into a bowl with the rest of the ingredients, add mustard (even with grains) and garlic, previously peeled and crushed. Also, season with salt and black pepper. Whisk the ingredients thoroughly to combine.
Step 3
Place the pre-washed and chopped pork chops in the prepared marinade and mix thoroughly. Cover the bowl with cling film and marinate the pork chops for at least 30 minutes.
Step 4
Take your Nikiri knife and cut in half young potatoes (you can use potatoes even in the skin), carrots, green beans (asparagus), and bell peppers.
Step 5
Now pour the contents of the bowl with olive oil or vegetable oil. Sprinkle everything with salt, black pepper and mix thoroughly, set aside for now.
Step 6
Remove the pork chops from the marinade and place them on the previously prepared baking sheet. Then carefully arrange the prepared vegetables around the pork chops. Brush vegetables and meat with the remaining marinade. Send the baking sheet to the preheated oven and bake the pork chops for 35-50 minutes, or until the meat is cooked through.
Step 7
Then cover the baking sheet with foil, return to the oven, change the setting to Roast and cook the pork chops for 3-7 minutes or until a well-done crust is obtained.
Step 8
Place the baked Pork with vegetables on a dish, garnish with chopped parsley, if desired. Slice the roasted Pork with a nice and sharp chef knife or long slicing knife and serve warm!

Tips & Tricks

Worcestershire sauce or hot sauce can be used for barbeque sauce. Use any combination of vegetables you want. For root vegetables, make sure they are cut into smaller pieces so that they can be cooked at the same time as the Pork.
Grab your Filleting knife and trim the pork chops. But don’t trim the fat because quality pork must be fatty. When cooking, the fat will melt, and the meat will remain juicy and tender. If there is not enough fat, there is a high risk of drying the out the meat.
